Chicken Cheese Balls | Rambler’s Food

This is an easiest recipe that you have ever tried. A bit time consuming but turned out to be a great one. This could make a high-impact appetizer in your next party. My Picky toddler liked this very much and asked for more which rarely happens. Ground chicken with a few herbs surely brings a lot of taste to the balls.

For a Party you can make the balls and freeze. Just take them out and fry just before serving for a gooey cheese flowing. This goes well with Tomato Ketchup , Tex-Mex Sauce or Chipotle Sauce.

Ingredients:

  • 300 g chicken boneless grounded
  • Freshly ground pepper – 1 tblspn
  • Garlic powder – 1 Tblspn
  • Onion Powder – 1 Tblspn
  • Dried Rosemary – 1/2 Tblspn
  • Dried Parsley – 1/2 Tblspn
  • Salt – 1 tblspn
  • Panko Bread crumbs
  • All Purpose flour
  • Egg – 2
  • Shredded mozzarella cheese

Instructions:

  • Take chicken, pepper, rosemary, Parsley, Garlic powder, Onion powder, and salt in a bowl and mix well.
  • Take lemon sized chicken balls of chicken mixture , Pat it in you palm to make it flat. add some cheese to it and form a ball again.
  • Dip the ball in All purpose flour, then egg and then coat with breadcrumbs. Again dip it in egg and coat with breadcrumbs.
  • Do the same for the rest of it.
  • Place in a bowl and freeze for at least 30 minutes.
  • Fry the balls for 3 mins each side or until its brown , in medium heat.
  • Fry just before serving to keep it gooey

Chicken Rice bowl | Rambler’s food

As an Indian I am so used and addicted to the taste of briyani. I always thought Briyanis cant be beat. But this recipe was a game changer. We tasted this recipe in a Mediterranean restaurant near our place . It is so delicious which made us get it every other night until we got bored. So I tried and recreated the recipe at home and it came out great and tasted almost the same as we got. I really thought it was an uphill battle to create this recipe but once I found the right things to do, it was effortless when compared to a briyani.

So , What do you need?

  • Tex-mex sauce
  • Tzaziki sauce
  • Basmati rice
  • Chicken Kebab

Do not be overwhelmed by so many sauce. Every recipe above is a take and mix technique

What to choose for a perfect rice bowl?

I personally use Sriracha Hot sauce for the tex-mex sauce along with other ingredients. This sauce adds real heat that is needed and adds a great deal .A great tex-mex sauce is the secret of this rice bowl

For Rice, Indian Basmati rice tasted great. not mushy and its flavor adds good taste to the bowl. Make sure the rice is not cooked fully, so it doesn’t break. I usually cook rice with salt and whole spices tied in a cheesecloth . This adds more flavor to rice.

Chicken breast pieces go well for this recipe. Cutting in strips and marinating for an hour and then fry int he oven for good results

Ingredients & Instructions:

Tex Mex Sauce is an Texas Mexican recipe and most american cuisines use this recipe.

Tex Mex Sauce

  • 1 cup sour cream
  • 1/2 cup mayonnaise
  • 1 tblspn black Pepper
  • 3 tblspn Sriracha hot sauce
  • Finely minced fresh Mint
  • 2 tblspn milk
  • 1 tblspn chili powder
  • 1 tblspn Garlic powder
  • Salt

Combine all Ingredients together and fold until it is mixed well. To make it more thin add few more tblspn of milk

Tzaziki sauce is a greek cucumber sauce originally form the middle east Cuisine. This goes well with rice, chicken veggies, falafel etc,

Tzaziki Sauce

  • 2 Cups Greek Yogurt
  • 1 Clove of Garlic minced
  • fresh mint minced
  • 2 tblspn of Olive oil
  • juice of half lemon
  • 1 English Cucumber shredded.

Shred Cucumber and squeeze out the juice using a cheese cloth. Add all other ingredients and mix well

Tastes great if chilled for an hour.

Fried Chicken Pieces/Kebab Pieces

  • 2 Tblspn Yogurt
  • 1 tblspn Chili Powder
  • 1 Tblspn Garam masala powder
  • Juice of 1/2 lemon
  • A pinch of Turmeric
  • 1 Tblspn oil
  • Salt as needed
  • 2 Chicken breast pieces

Marinate the chicken for atleast 1 hour breast pieces with the mentioned ingredients by making small slits on it.

Air fry, bake or pan fry chicken with little oil.

Cut down the breast pieces into bite size pieces once cooked


Cooking Rice

  • Soak 3 cups of Basmati Rice in water for 1 hour.
  • Boil 9 cups of water and add Basmati Rice with lots of salt. Add the whole spices(2 Cardamom, 1 bay leaf, 4 black pepper, 3 5 cloves) by tieing in a cheesecloth.
  • Cook until its done and strain.

Instructions for making Chicken bowl

In a Bowl, assemble rice in one half of the bowl. Add chicken on other half of the bowl. Pour Tzaziki sauce over Rice. drizzle a good amount of Tex-Mex sauce all over the bowl.

Spicy Creamy Mexican Chipotle Sauce | Rambler’s food

Are you a Mexican food lover? Do you like that kind of spice? Then I am sure you have visited Chipotle for sure. This is one recipe inspired by the Rice bowl from Chipotle and recipe from loveandlemons.

This tasted great and was a hit when I first made it for lunch. The Creamy texture with the spice of Chipotle peppers was finger-licking. A great sauce can turn any meal into a delicious one. Personally this is one of my favorite recipes

What do I do with Chipotle sauce?

This yummy sauce goes well in veggie wraps, salads, rice bowls with chicken or any meat. Check out my recipes for more ideas. A dip for some fries for a evening party was another hit dish.

How to make Chipotle Sauce?

The secret ingredient is the Chipotle peppers in Adobo sauce. Adobo sauce is made of Chili powder , sugar, vinegar, garlic and herbs.This is originally and Mexican recipe and used widely in Tex-mex recipes as well. So do not worry about gluten for using this. The heat of these peppers is balanced by honey and lemon. The brightness of sour cream, mayo and lime add some more creaminess to the recipe.

Ingredients:

  • 3 peppers from 1 can of Chipotle peppers in Adobo sauce.
  • 1 tbsp of honey
  • 1 tblspn of Olive oil
  • 1 cup Sour cream
  • 1/2 cup of Mayonaisse
  • 1 Garlic
  • Juice of 1/2 lemon
  • 1 tblspn of pepper
  • Salt as needed

Instructions:

Take Chipotle peppers, honey, olive oil , Maye , Sour cream, Lemon, Garlic(mined),Pepper and salt in a food processor and blend until smooth. Add more salt and pepper as desired.

You can also substitute Sour cream to Greek Yogurt if desired.

Stay Warm in Winter: Fried Cakes

Hello there! Up for a new recipe? Check out the new recipe which is one of our favorite from my native town. Fried Cakes is a sweet delicacy from southern India usually found in Tea shops. This is one famous recipe that goes well with tea or coffee and usually served as a evening snack. This is one easy recipe but makes a great delight.


Where to find the Ingredients?

You can find all of the ingredients in an Indian grocery store. Also in Amazon.

How to Blend

Beating the eggs doesn’t need to be frothy or creamy. Just mixing it well sugar and cardamom will do. Eggs give real good taste to the cake but you can also skip the eggs if you are vegetarian.

Nature of Dough

The dough need not be hard enough like a cookie nor loose like a cake batter. Its can almost be like a loose tortilla dough. Never mind if it sticky, this is gonna make the cute cracks on the cake.

Size of balls

Make sure to roll medium sized balls and drop them immediately in hot oil. Rolling a larger ball may leave it uncooked in the middle with crispier ends and a smaller ball may get more crispy. Temperature of oil shall be lesser than medium to cook perfect fried cakes. It might take a little longer like 5 to 6 minutes so have your patience.

We were so excited to eat the cake right out once fried but ended up eating a chewy one. So tame your excitement for until its cool to have a blast of crunchy fried cakes!

Ingredients

All Purpose flour/Maida – 1 Cup(125 g)

Rava/Sooji -2 Tbsp

Rice Flour – 1 Tbsp

Baking Soda – 1/2 Tbsp

Salt -As needed

Sugar – 1/2 cup(100 g)

Cardamom -3

Egg – 1

Milk – 2 Tbsp

Ghee – 1 tsp

Oil for frying – 1/2 cup

Instructions

Blend Sugar and Cardamom in to a fine powder. Add this mixture to the Egg and beat it well . You can either use a hand blender or add the egg to the blender and blend roughly.

Now Take a bowl and mix all purpose flour, Sooji , rice flour, salt baking soda(dry ingredients). Add in the egg mixture and milk to this and give a quick stir.

Leave it covered with a wet cloth for 20 minutes.

Heat a pan with Oil for frying. Mean while apply little oil to your hands and make small balls of the dough. Make sure the balls are medium sized.

Fry the balls for around 5-6 minutes. Serve once cooled.
